Baking Your First ZaDome Pizza

From Heat to Finished Pizza

With the dome and baking plate preheated, the pizza cooks using the energy already stored in the carbon steel. This is the key idea behind ZaDome: intense heat from above and below without leaving the burners on during the bake.

Use the finished pizza as your guide for future bakes. If you want more bottom browning, raise the baking-plate temperature next time; if the bottom is cooking too quickly, lower it. Because the two surfaces are heated independently, you can fine-tune the balance for your own dough and preferred pizza style.
